The Chicken Satay Salad is our choice for this week. We love this dish because it’s one of the best healthy recipes out there. It’s quite simple to make and it doesn’t take too long, apart from the chicken that needs to be marinated. This recipe is incomplete without the peanut dressing and sauces that will excite your tastebuds.

The ingredients you need for this recipe are:
- 2 skinless chicken breast fillets
- Sunflower oil for the pan
- 1 tablespoon sweet chili sauce
- ¼ teaspoon of ground cumin
- 1 teaspoon of curry powder
- 1 tablespoon of tamari
- A dash of chopped coriander
- Half of a deseeded pomegranate
- 1 tablespoon of lime juice
- 1 finely grated Garlic Clove
- 1 teaspoon of clear honey
- 1 tablespoon crunchy peanut butter
- ¼ cucumber halved and sliced
- 2 little gem lettuce hearts cut into wedges
- 1 banana shallot halved and thinly sliced
Step 1: Pour tamari into a large dish and add curry powder, cumin, honey, and garlic. Mix these ingredients together to make a marinade.
Step 2: Slice both chicken breasts in half, then dip fillets in the marinade. Store it in the fridge for 1 hour or overnight. Add peanut butter, chili sauce, lime juice with a tablespoon of water together in a bowl.
Step 3: Pour some sunflower oil into a non-stick frying pan. Place chicken in the pan to cook with a lid covering the pan. Cook on medium heat for 6 minutes until cooked. Don’t forget to turn the fillets over beforehand! Then put the pan aside for the chicken to set.
Step 4: Add lettuce wedges, cucumber, shallot, pomegranate, and coriander together on a plate. Pour the sauce from Step 2 on the salad.
Step 5: Slice the chicken into smaller pieces, then place the chicken on top of the salad and pour the rest of the sauce over it. Make sure you serve this dish while the chicken is still warm. Yum!
