We’re kicking off our healthy recipes series with the scrumptious Skinny Fettuccine Alfredo. It’s like a regular fettuccine alfredo, only with less heavy cream and butter. This version still has the creamy richness of the original recipe, but it’s much lighter in terms of ingredients and calories. The Skinny Fettuccine Alfredo is also simple and quick – perfect for those who are always on the go! Let’s cook!
The ingredients you need for this recipe are:
- 1 lb uncooked fettuccine
- 2 cups of milk
- 1 tablespoon all-purpose flour
- ¼ teaspoon of salt
- A dash of black pepper
- A dash of cayenne
- 2 tablespoons of butter
- ⅔ grated Parmesan or Romano cheese
- 2 ounces of low-fat cream cheese
- 2 tablespoons of chopped parsley
- 2 teaspoons of chopped garlic
Step 1: Boil fettuccine in a saucepan, without adding salt. Drain fettuccine, then return it to the saucepan, covering fettuccine to keep it warm.
Step 2: In a medium-sized bowl, mix together these ingredients: milk, flour, salt, black pepper, and cayenne with a wire whisk until a smooth mixture is made. Melt butter over medium-low heat in another saucepan, adding garlic and stirring it for one minute. Try not to burn it!
Step 3: Stir milk mixture and butter mixture together in a saucepan. Stir over medium heat for 6 to 8 minutes or until the mixture boils.
Step 4: Add cream cheese and Parmesan cheese and stir together until the cheese has melted. Pour over fettuccine, coating it all over. Sprinkle with parsley. Dig in!
